Potluck Stamp of Approval: Grilled Vegetable Kabobs

Vegetable Kabobs

Inspired by my Rainbows and Unicorns Themed Party that I shared last week, I thought today we’d talk about ‘oh so colorful’ Grilled Vegetable Kabobs.  These are perfect for a potluck — whether it be at your home, or if someone is having a party that will have a grill available.  You use a variety of different vegetables and test out a wide array of marinades based on preferences.  I don’t have any quantities listed below because it really depends on how many you’re making for how many people.  Make one or two kabobs to feel out how many vegetables can fit (since skewers come in a few different sizes), and then cut more vegetables from there.

Grilled Vegetable Kabobs

  • Kabob skewers (wooden or metal)
  • Zucchinis
  • Red Peppers
  • Yellow Peppers
  • Orange Peppers
  • Red Onions
  • White Mushrooms
  • Zesty Italian Dressing

Cut several veggies and do one or two test skewers to determine how many vegetables can fit on your skewer size.  Adjust size of vegetable cut and play around with an order on the skewer that looks visually appealing.  It’s always good to have a game plan set up before you cut all the vegetables and start assembling 10-30 of these! 🙂

Once you have a game plan, cut all the veggies that you need in the size that works for your set up.  Place veggies in large ziplock bag(s) — make sure there is room for shaking.  If you need to put them in multiple bags, do so.  Add Italian dressing (or other marinade) to each bag — you want just enough to coat the veggies.  Seal bags and shake a couple times.  Leave veggies to marinate for a half an hour.

Assemble kabobs based on the game plan you determined in your test run.

Display on a large platter.  Have a side of dressing on the platter to use for basting.

Grill kabobs until cooked through.

    I love grilled vegetable kabobs and will try with Italian dressing marinade. Sounds delicious, makes me wish it were summer so I can start grilling again,
