Brunch is a great time to have refreshing fruit juices. They balance out the eggs, meats, and starches so well. Plus, they just taste delicious! This Strawberry Lime Delight is made as a pitcher so it can serve a gathering. I made it non-alcoholic. However, feel free to substitute the club soda for sparkling wine for a tasty mimosa. This would also be good with a shot of dark rum and served in the late afternoon.
Strawberry Lime Delight
Combine strawberries and lime in a blender. Pureé until smooth. Add club soda and blend until combined. Pour into a pitcher.
In each glass fill with ice and pour half way up with orange juice. Add the strawberry mixture. Without mixing, this makes a beautiful presentation along with a strawberry on the rim.
(You can also combine strawberry mixture and orange juice into one pitcher for easier serving. )
