Ingredient Spotlight: Zucchini

Zucchini

Zucchini is one of my favorite vegetables.  So delicious and there are so many wonderful ways to prepare it.  Depending on the part of the world you are in, these tasty vegetables are also called Courgettes.  Considered a summer squash, zucchini has a mild flavor and works well in not only savory dishes, but baked goods as well.  When selecting zucchini, choose ones that are free of blemishes.  The smaller they are, the more tender.

Zucchini are very easy to grow and the plants become quite plentiful — a great vegetable for gardeners just starting out.  They also have beautiful blossoms, which are also edible, and make great arrangements (noting that if you pick zucchini blossoms early enough  you won’t have a zucchini).  Here is our first blossom for the year!

      Thanks Cynthia! I actually think I might plant even more next year and just have some of the plants used only for picking the blossoms for arrangements.

  6. Love me some zucchini. It’s definitely one of my favorite vegetables, too, so in my humble opinion, VERY worthy of your spotlight. My favorite way to eat it, though, might have to be zucchini bread (with chocolate chips). Is it THAT obvious that I have a sweet tooth? Lol.

      Ha, I actually thought of you Lauren when I was doing this post… I remembered how much you have voiced your love of zucchini in the past! 😉
      Yeah…I love zucchini bread too. Looking forward to making it and doing a recipe post with it once we start harvesting some of our zucchini in the garden.

    This is such a great vegetable to feature. I’ve made a pasta with it which I will be posting soon. What I am missing in life is to try a fried zucchini flower…..:-)

    Yes, zucchini is a delicious vegetable to have around, hubby and I we love trying different recipes during the summer. My parents and his parents grow them in their yard every year so we always have plenty to eat during the end of summer! 🙂
