These little popovers are the perfect savory treat to bring to your next potluck — or to just have on hand to go with a lunch or dinner. The bleu cheese really packs a delicious punch and you won’t believe how easy these are to make!
Tiny Roquefort Popovers — from Williams-Sonoma Hors d’Oeuvre
Preheat oven to 450 degrees.
Coat one 24-cup or two 12-cup mini muffin pans with cooking spray.
In a large bowl, whisk together the flour, salt, white pepper, and parsley.
In a separate bowl, whisk together the milk, eggs, and melted butter.
Pour the wet ingredients over the dry ingredients and whisk together until just combined.
Pour the batter into the prepared muffin paps to within about 1/4 inch of the rim. Place a scant teaspoon of crumbled bleu cheese in the center of each filled cup.
Bake for 10 minutes.
Without opening the oven, reduce the heat to 350 degrees and continue to bake for 8-10 minutes longer, or until browned and fully puffed.
These look some great too for the Easter brunch…awesome.

I’ve never heard of a popover… are they like little quiches? I don’t think that we have such a thing in Australia. Love roquefort though, any blue cheese creation is a winner, in my opinion! Love your blog also… I’ll be following from now on xx
Other than being cute, they aren’t too much like quiches. Quiches are egg based. Popovers have more similarity to a puffed up pancake (though unless you add sugar, the dough won’t be sweet). And yes, anything with bleu cheese is great in my book too!
