There are three things that I cannot resist in the food world. One of which is asparagus. It is probably my number one impulse produce purchase. If the stalks look good and the price is decent, it is going in the cart! I also love anything with goat cheese. The creamy and delicious taste takes any dish to the next level. And bacon. Need I say more about bacon… I think not!
This dish, which combines these three wonderful elements, was very easy to make and quite affordable. And for the vegetarians, the sauce is still going to be good and flavorful if you just omit the bacon.
Roasted Asparagus with Goat Cheese and Bacon Sauce
Preheat oven to 400 degrees.
Toss Asparagus with olive oil, cracked pepper and kosher salt to taste in a jelly pan. Roast in oven for 6 minutes and remove from heat. Stir asparagus and put back in oven for another 6-7 minutes, or until crisp tender.
Combine goat cheese, mayonnaise, lemon juice, bacon, and cracked pepper to taste. Whisk together. Slowly incorporate milk (about 1 Tbs at a time), stirring until smooth.
Arrange asparagus on a platter. Drizzle with sauce and serve.

I love roasted asparagus. I never had it this way I will have to give this a try. I ususally use freshly grated parmasen.
Yeah, more often than not we just do some fresh grated Parmesan and freshly squeezed lemon. But this was a really yummy and fun way to “dress up” a standard vegetable favorite 🙂
Asparagus is so good and I usually prepare it a couple different ways. I definitely needed a new recipe! I love the goat cheese and bacon drizzle 🙂
