Casual Dining: Corn Bread Muffins with Roasted Jalapeno Butter

Mini Cornbread Muffins

As promised, I am providing recipes for all the dishes that were discussed in the Menu Planning post.

Corn Bread Muffins — from COOKS.COM

  • 1 cup yellow corn meal
  • 1 cup flour
  • 2 1/2 tsp baking powder
  • 1/3 cup sugar
  • 1 tsp salt
  • 1 egg
  • 1 cup milk
  • 3 Tbs melted butter or shortening

Preheat oven to 375°F.

Combine corn meal, flour, baking powder, sugar and salt until well mixed and no streaks remain.

Beat egg well, add milk. Pour milk and egg mixture into the dry ingredients, stirring until mixed. Add melted butter or shortening.

Bake in a well-greased shallow pan in oven or in heated muffin tins. Well seasoned cast iron muffin tins or frying pans work well. Bake until a toothpick inserted in center comes out clean (about 20-25 minutes for muffins, depending upon size, and about 45 minutes for a frying pan. Baking time depends upon the kind of pans used, how hot the pan is when you start and your oven, so use your own good judgment.

Roasted Jalapeno Butter — from Cooking Light Magazine (June 2011)

  • 1 jalapeño pepper
  • Cooking spray
  • 7 teaspoons unsalted butter, softened
  • 1 teaspoon grated lime rind
  • 2 teaspoons honey
  • 1/4 teaspoon salt

Preheat grill to medium-high heat.

Place jalapeno on grill rack coated with cooking spray; cover and grill for 10 minutes or until blackened and charred, turning occasionally.

Place jalapeno in a small paper bag, and fold tightly to seal.  Let stand for 5 minutes.  Peel and discard skins; cut jalapeno in half lengthwise.  Discard stem, seeds, and membranes.  Finely chop jalapeno.  Combine jalapeno, butter, lime rind, honey, and salt in a small bowl; stir well.
